Las Vegas Chapter Dinner

With the help of June Deley, we have planned our next gathering.  It will be
at the Claim Jumper (601 N Green Valley Parkway, Henderson, NV 89074) on
Thursday, April 25, 2024, at 6:00 p.m.  We chose it because we had a
nice dinner there last year, and it is right off the 215 on Green Valley
Parkway and easy to find.  Cyndy will need your RSVP by April 18, 2024, to
give the count to the restaurant. Email Cyndy (ceanderson@ysu.edu) with your name, YSU graduation year (if applicable) and name of guests before April 18th.  Alumni, Penguin friends, and fans are invited!

The cost with tax and tip is about $40 per person.  We have negotiated with
them to give us separate checks as long as couples sit together, and we will
need to be patient with the server as s/he prepares the checks.

Here is the menu from which you will choose that evening:

– Jambalaya.  Blackened chicken, shrimp, Andouille sausage, mixed peppers,
onions, rice, tomatoes, Jambalaya sauce, and green onions.

– Atlantic Salmon.  Garlic herb butter or blackened with Jasmine rice and
roasted vegetables.

– Steak & Shrimp.  Seven-ounce top sirloin, grilled shrimp,, garlic-herb
butter, parmesan onion ring, green onions, mashed potatoes, and roasted
vegetables.

– Top Sirloin. Seven-ounce certified Angus beef, garlic-herb butter, parmesan
onion ring, mashed potatoes, and roasted vegetables.

– BBQ Baby Back Ribs.  Half a rack of ribs basted with their BBQ sauce, mashed
potatoes, and roasted vegetables.

– Chicken Florentine.  Spinach artichoke dip, mashed potatoes, tomatoes,
Whiskey glaze, Dijon cream sauce, parmesan cheese, and microgreens.

Along with the entrée, you get a choice of small garden salad or Caesar
salad.  You also get a choice of bottomless beverages including Barq’s Root
Beer, Coke, Diet Coke, Sprite, Dr. Pepper, lemonade, iced tea, or tropical
tea.

April 25 is also World Penguin Day and falls during National Volunteer Week, so to celebrate both, we are collecting food items for Catholic Charities in Las Vegas. We chose this charity because the Executive Director of the agency, Tom Roberts, is a YSU alum.  They will accept non-perishable foods for their food pantry, especially the following items:

– Canned meat (tuna, chicken, or spam)

– Canned vegetables

– Peanut butter

– Pasta or rice

– Cereal
Please consider bringing some of these items to the dinner to show that YSU Penguins give back to their community.
